Thai Basil Chicken Stir-Fry

A quick and aromatic stir-fry with tender chicken, Thai basil, and a savoury-sweet sauce. Ready in under 20 minutes.

Method

  1. 1.

    Dice chicken thigh into bite-sized pieces. Mince garlic and slice chillies.

    Cook jasmine rice according to packet directions.

  3. 3.

    Heat oil in a wok or large frying pan over high heat until smoking. Add garlic and chilli, stir-fry for 30 seconds.

    High heat is essential for proper wok hei.

    Add chicken and stir-fry for 4-5 minutes until cooked through and slightly caramelised.

  5. 5.

    Add oyster sauce, soy sauce, fish sauce, and brown sugar. Toss to coat.

  6. 6.

    Remove from heat and fold through Thai basil leaves until just wilted. Serve immediately over jasmine rice.
